We appreciate and delight in the food, but what’s cooking beyond the dish? In a new series, Ono Yum steps out of the kitchen and gets a peek at the man behind the chef coat. Meet Chef Kurt Metzger of Kitchen 4140.
OY: What did you have for dinner last night?
KM: Panang Curry and Shaking Beef Salad.
OY: If you could share a meal with any one person, who would it be?
KM: Anthony Bourdain. He’s a pioneer in the food industry, being one of the first who was able to be open and verbal about how kitchens are really run - and because of his in-depth food knowledge.
OY: What inspires you in and out of the kitchen?
KM: I’m inspired by the beautiful weather and produce that San Diego has to offer!
OY: What is your theme song? Why?
KM: Kid Rock’s “Cowboy,” because I’m a badass cowboy in the kitchen!
OY: Give away one trick/tip that anyone could use in the kitchen.
KM: Cook from the heart.
